Deb's Chicken Salad

Another summertime favorite. Perfect for a hot day. Serves four.


Ingredients

8 ounces of fresh pineapple chunks (or an eight oz. can)

2 tablespoons pineapple juice

cup mayonnaise

1 tablespoon Dijon mustard

¼ cup celery, thinly sliced

1 medium green onion, thinly sliced

 cup slivered almonds, toasted

 cup raisins

1 dash of salt

4 cups cooked chicken (cooled)

¾ teaspoons curry powder


Directions

  • Combine two tablespoons of pineapple juice with mayonnaise, mustard, curry powder, and salt. Set aside.

  • Cut chicken into tiny slivers and mix with remaining ingredients.

  • Add flavored mayonnaise and blend well.

  • Refrigerate for one hour and serve with lettuce, pineapple, and green grapes.
