
Another summertime favorite. Perfect for a hot day. Serves four.
Ingredients
8 ounces of fresh pineapple chunks (or an eight oz. can)
2 tablespoons pineapple juice
⅔ cup mayonnaise
1 tablespoon Dijon mustard
¼ cup celery, thinly sliced
1 medium green onion, thinly sliced
⅓ cup slivered almonds, toasted
⅓ cup raisins
1 dash of salt
4 cups cooked chicken (cooled)
¾ teaspoons curry powder
Directions
Combine two tablespoons of pineapple juice with mayonnaise, mustard, curry powder, and salt. Set aside.
Cut chicken into tiny slivers and mix with remaining ingredients.
Add flavored mayonnaise and blend well.
Refrigerate for one hour and serve with lettuce, pineapple, and green grapes.
