Spinach Salad

This rich and flavorful salad features fresh spinach and green onions drizzled with a warm, sweet, vinegary dressing, and sprinkled with crunchy bacon and tender bits of hard boiled egg.


2 pounds spinach (room temperature)

5 slices bacon

6 green onions, sliced

1 cup sliced fresh mushrooms

3 hard cooked eggs (sliced)

3 tablespoons sugar

½ cup vinegar

½ cup water

Salt and pepper to taste


Fry bacon, remove and add vinegar, sugar and water to the pan. Heat to boil. Crumble bacon and add over spinach along with other ingredients.
