Put this out for snacks and its gone in minutes.
½ onion finely chopped
4 large cloves garlic - finely chopped
2 tomatoes - seeded and finely chopped
1 can diced tomatoes with garlic, basil, drained
1 packet fresh basil, finely chopped
⅓ cup extra virgin olive oil
Salt and pepper to taste
Combine all ingredients and adjust seasoning to taste, or as my favorite cook likes to say, “keep tasting until it tastes good." This usually tastes better after sitting in the fridge overnight.
