Rose's Garden Relish

This recipe is from Rose Glassburn, Grandpa Cloud's Aunt. He enjoyed making this recipe in the summer with vegetables from his garden. It was passed on to me by Aunt Lois.


Ingredients

10 green tomatoes

10 carrots

10 red sweet peppers

10 green sweet peppers

10 onions

1 bunch of celery

3 tablespoons salt

3 cups of vinegar

6 cups of sugar

1 tablespoon mustard

1 tablespoon celery seed


Directions

  • Grind all together (except celery).

  • Add 3 tablespoons of salt.

  • Let stand for one hour or longer, then squeeze out the liquid.

  • Add one bunch of celery chopped fine. Do Not Grind the Celery!

  • Add three cups of vinegar, six cups of sugar, one tablespoon of prepared mustard, and 1 tablespoon of celery seed.

  • Cook for 30 minutes and seal while hot.
