Date Pinwheel Cookies

From Rose Ann Long.

These rolled cookies with a date-filled center are a holiday favorite.


Ingredients

Filling:

½ pound dates

1 cup finely chopped pecans or walnuts

¼ - ½ cup sugar

½ - 1 cup water

Heat until thickened


Dough:

2 cups flour

4 eggs

½ - 1 teaspoon baking powder

½ - 1 teaspoon soda

½ - 1 teaspoon salt

½ - 1 cup shortening

¼ - ½ cup brown sugar

¼ - ½ cup white sugar


Instructions

Beat together eggs and add dry ingredients. Spread with date mixture, roll and chill. Slice and bake at 350 for 15 minutes.
